MARK CAVANAGH from Bistro 26 in Lancaster has this week's delectable recipe for chocolate brownies.
Mark said: "They are very indulgent and perfect served cold or warmed with a large scoop of ice cream."
Chocolate Brownies
Ingredients
* 300g (11oz) unsalted butter
* 300g (10½oz) dark chocolate with at least 60% cocoa content
* 5 large eggs
* 450g (1lb) granulated sugar
* 1 tablespoon vanilla extract
* 200g (7oz) plain flour
* 1 teaspoon salt

Method
1) Pre-heat the oven at 180°C/350°F/gas mark 4.
2) Line a baking tin (34 x 25cm and at least 6cm deep) with greaseproof paper.
3) Melt the
chocolate and butter either in the microwave or by placing in a heatproof bowl over a saucepan of simmering water.
4) Whisk together the eggs, sugar and vanilla extract until thick.
5) Combine the egg
mixture with the melted chocolate and butter.
6) Mix the flour and salt together.
7) Add to the mixture and mix until smooth.
8) Pour into the tin and bake for 20 to 25 minutes. The top should start to crack and the mixture should not wobble but still be gooey inside.
9) Leave to cool for 20 minutes then cut into squares, peel off the paper and eat!
